Flourless Peanut Butter Cookies

This recipe is partcularly great for people with glutton issues or those who wanting a less fattening treat. The recipe  can’t be beat if you love peanut butter cookies. These are flourless. Amazing? How does it work? I have no idea, but they are truly excellent and such a treat for holidays or anytime of year.
Makes about 4 -5 dozen cookies
Oven 350 degrees

Ingredients
1 cup peanut butter (for diet use low fat)
3/4 cup packed brown sugar (for diet or diabetic use Splenda brown sugar)
1 large egg
3/4 tsp. baking soda

Directions
Beat all ingredients until well mixed. Drop by teaspoon, 1-1/2″ apart on parchment paper lined cookie sheets. Bake until puffed and starting to get light brown on the edges — about 8 – 10 minutes.
Cool 5 minutes then transfer to wire rack. Enjoy.
