Pecan-Crusted Chicken

This Pecan-Crusted Chicken recipe comes from novelist Lenora Worth at  It’s one of her favorite meals so serve at home or for guests.

Pecan-Crusted Chicken

4 – 8 boneless chicken breasts
Pecan chips – purchase in 16 oz bag for grind your own
Mustard – one like Grey Poupon
Add salt and ground pepper to your taste.

Dredge the chicken breasts in the mustard and roll in the pecan pieces to cover both sides. Place the cutlets in a sprayed or buttered baking dish – 8 X 8 for four or 9 X 12 for eight. Bake for about 45 minutes or until you can smell the roasted pecans. Then check for doneness.

Serve with “smashed potatoes” and a salad! Or cut up the chicken cutlets and place on a big salad with strawberries and greens. 🙂
