Zuccini and Tomatoes with Parmesian

This simple recipe came from a reader and follower of my newsletter, Joye Wesley. Not only is it easy to make but it is very low in calories so you can enjoy it, guilt-free. This makes a nice vegetable for the family or even company. Joye says it’s yummy and I believe her.

This should serve three or four as a dinner vegetable.


1 large can of stewed tomatoes (or diced tomatoes if you prefer)

 3 zuccinis, sliced

1/4  cup low fat,  shreaded parmesan cheese

Mix tomatoes and zuccini in mircowave safe container. Cook for 2 minutes until tender. Remove and sprinkle the top with the low fat parmesan cheese
