Swiss Creamed Peas

Fellow novelist Patt Marr loves cooking and giving dinner parties, and she also does what I do, she collects tasty recipes. Here’s a veggie that will add an interest treat to any dinner. Patt recommends you serve the decadently delicious peas with potatoes and grilled chicken. And enjoy!

Swiss Creamed Peas

Ingredients:
1 16-ounce bag frozen peas
2 tablespoons butter
1 bunch sliced green onions (include 1/2 of the green part)
1 large yellow, orange or red bell pepper, chopped (optional)
1/2 teaspoon salt
2 tablespoons flour
1 cup heavy cream (or more as needed)
1 teaspoon grated lemon peel
1 cup Swiss cheese, grated or chopped fine

Directions:
In a medium large skillet or sauce pan, cook peas as directed on the package, then drain into a colander. In the same skillet or saucepan, melt butter. Saute onions and bell pepper until tender (NOT brown). Whisk in the salt and flour. Add the cream. Stir until sauce thickens. Put the peas into the sauce. Add grated lemon and Swiss cheese. Serve when cheese has melted.
