Do you like chocolate? Mexican food?

Mexican Brownie Bites One of our Thanksgiving treats was my newest find, Mexican Brownie Bites. Our family loves Mexican food and so I thought that was a perfect addition to the other desserts we had for Thanksgiving. And I promised my FB friends that I would share the recipe.

Mexican Brownie Bites

These tangy desserts are baked in mini-muffin pans and will make approximate 48 mini-muffins. Two muffins will be approximate 52 calories. They are very easy to make and delicious.

1 box of moist-style devils’ food or chocolate cake mix (approx 18 oz)
One 15 oz can pure pumpkin
2 tsp. vanilla extract
1 tsp. cinnamon
1/4 tsp. cayenne pepper
1/2 cup mini semi-sweet chocolate chips.


Preheat oven to 400 degrees. Spray 3 or 4 12-muffin size pans with nonstick spray.

In a large bowl, combine all ingredients except chocolate chips.
Mix until smooth and uniform. Batter will be thick. Fold in chocolate chips.

Evenly distribute batter among the cups of the muffin pans and smooth out the tops.

Bake until a toothpick inserted into the center of a muffin comes out
clean. About 10 -12 minutes. Makes about 36 – 48 muffins.

These will freeze well so don’t be afraid to bake the full recipe and you’ll have some for guests at a later date. ¬†Enjoy.
